Hot Apple Cider With Cinnamon, Vanilla and Toasted Pecans
Celebrate the holiday season with a hot apple cider infused with vanilla and cinnamon topped with fresh whipped cream and toasted pecans. Heating the cider will fill your home with the most amazing aroma of apples and cinnamon as if you were making homemade apple sauce or homemade apple cider.
This is the perfect drink to serve on a cold day, or for Thanksgiving as your guests arrive, or with dessert. I’m making it for cookie exchange I’m hosting the first week of December. Cider and cookies are a perfect pairing! You can find raw, unfiltered apple cider in the produce section at Safeway.
This would pair nicely with the Pumpkin Chocolate Chip Muffin Tops or the Maple Glazed Pumpkin Cookies as a dessert for a brunch or a holiday gathering.
How is Apple Cider Different from Apple Juice?
Apple Juice and apple cider are both made with apples, but there is a distinct difference between the two. Fresh cider is raw apple juice that has not undergone a filtration process to remove coarse particles of pulp or sediment. It’s more expensive because it takes more apples to make a gallon of cider.
To make fresh cider, apples are washed, cut and ground into a mash that is the consistency of applesauce. Layers of mash are wrapped in cloth, and put into wooded racks. A hydraulic press squeezes the layers, and the juice flows into refrigerated tanks. This juice is bottled as apple cider.
Apple juice is juice that has been filtered to remove solids and pasteurized so that it will stay fresh longer. Vacuum sealing and additional filtering extend the shelf life of the juice.

Ingredients for Hot Apple Cider
- 8 cups unfiltered or raw apple cider
- 2 cinnamon sticks
- 1 vanilla bean (split lengthwise in half)

- 1 cup whipped cream
- 1 cup coarsely-chopped toasted pecans

How to Make Vanilla and Cinnamon Infused Hot Apple Cider
This hot apple cider is incredibly easy to make and takes just 10 minutes.
Step 1
In a medium sauce pan, heat apple cider with cinnamon sticks and vanilla bean over low heat, about 10-15 minutes. Remove cinnamon sticks and vanilla bean.
Step 2
Pour into mugs and garnish with whipping cream, pecans and cinnamon sticks. Serve.
I highly recommend adding the orange segments while heating the cider. The addition of orange gives the cider a perfectly balanced citrus, sweet and spicy finish.
