Vegetarian Enchiladas
Savory green-chiles, onions, and Mexican-seasoned plant-based ground are used to make these delicious meatless Vegetarian Enchiladas. Perfect for Meatless Monday, or anytime you are craving Mexican food!
I prepared these vegetarian enchiladas over the weekend when we had family over for dinner. I did not tell anyone that they were meatless, instead, I silently watched as everyone piled their plates high with food and raved about the enchiladas.
I later pulled out the packaging and told them they all ate vegetarian enchiladas and they were in awe that a meal made with a filling that completely resembled ground beef was in fact not. It was a fun experiment and a testament to the product which tastes so good that even the most fervent meat eaters thoroughly enjoyed it.
About OZO Plant-Based Ground
For this recipe, I used the new OZO Foods Plant-Based Ground product. OZO is a Colorado-based company that is helping pave the way for sustainable plant-based proteins, ideal for anyone following a flexitarian, vegetarian, or vegan lifestyle.

OZO Plant-Based Ground Review
OZO sent me a package of the Mexican ground product to review. I have tried all the other plant-based ground on the market, and I will say OZO has a delicious flavor that is unique to this brand.
The texture is somewhat similar to ground beef. The Mexican seasoned ground was perfectly seasoned, ready for tacos, nachos, quesadillas, taco salads, Mexican lettuce wraps, or enchiladas.
I made vegetarian enchiladas with the plant-based ground and they were absolutely delicious! The enchiladas got 5-star reviews from my 15-year-old meat-eating nephew, my brother and sister in law and my kids.
I did add a little more seasoning to my ground for the enchilada recipe because I wanted to punch up the chile and cumin flavors just a touch, but you don’t have to add extra seasoning if you don’t want.

OZO Plant-Based Ground Nutrition Info
OZO Plant-Based Ground is made from pea and rice protein and with non-GMO ingredients. Each 4 oz serving contains 270 calories, 18 grams of fat (6 grams of saturated fat), 490 mg. of sodium, 7 grams total carbs, and 21 grams of protein.
The ingredients include: Water, Textured Pea Protein (Pea Protein, Pea Fiber), Sustainable Palm Oil, Wheat Gluten, Canola Oil, Pea and Rice Protein Fermented by Shiitake Mycelia, Methylcellulose, Spices, Malt Extract Flavor, Salt, Ascorbic Acid, Sugar, Dehydrated Garlic, Lime Juice Powder (Maltodextrin, Lime Juice Solids), Natural Flavors, Citric Acid, Fruit Juice (color)
Vegetarian Enchilada Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 1 12 oz package OZO Plant-Based Mexican Seasoned Ground
- 1 can diced green chiles
- 1/4 teaspoon chile powder
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- salt & pepper to taste
- 1 can enchilada Sauce
- 8 corn tortillas
- 4 oz shredded cheese
How to Make Vegetarian Enchiladas
Heat a non-stick skillet over medium-high heat. Heat olive oil in the pan, then add the diced onions and saute until soft and fragrant – about 3 to 4 minutes.
Add the OZO Plant-based ground and diced green chiles and stir to mix until the ground is fully crumbled and the veggies incorporated.
Season with chile powder, cumin, dried oregano, and salt and pepper
Add 1/4 cup of enchilada sauce to the pan. Stir to mix.
In a rectangular baking dish, add a layer of enchilada sauce to the bottom of the dish.
Scoop 2 tablespoons of the veggie filling into each tortilla. Top with 1 tablespoon shredded cheese, then roll and place in the baking dish seam-side down.
Repeat until all 8 tortillas are filled. Top with remaining enchilada sauce and cheese.
Cover with foil and bake at 350° for 20 minutes.
Remove the foil and turn the broiler on. Let the broiler toast the top of the tortillas and cheese until the tortillas become slightly toasted on the ends. This is optional – you could eat it without the broiling step, but this extra step adds a delicious layer of flavor.
Serve with a side of tomato corn salad, black beans or sour cream, or your favorite Spanish rice.
