Zucchini Fritters Recipe
Zucchini is on sale this week at Safeway, so I wanted to share my favorite zucchini recipe using simple ingredients like shredded zucchini, eggs, garlic, flour and parmesan cheese! This is the perfect way to get your kids to eat more vegetables because they will devour these zucchini fritters! My kids like to eat theirs with a side of marinara sauce.

- Combine zucchini and salt and place in fine mesh colander. Let sit 5-7 minutes. Press zucchini into bottom of colander until 1/4 to 1/3 cup of water is released. You can also squeeze the zucchini in a cheese-cloth or clean kitchen towel to eliminate the excess moisture.
- Mix zucchini with the salt, pepper, garlic, flour, eggs and parmesan cheese until just combined.
- Brush skillet with olive oil. Heat the skillet to medium heat. Make zucchini fritters into 1/4 cup round patties. Cook until golden brown about 4 – 6 minutes each side.
- Serve warm
I like to serve with a side of Greek Tzaziki sauce for my husband and I as the garlic flavor is wonderful with the zucchini fritters.
