Pan-Seared NY Strip Steak with Avocado Butter
Ingredients
- 2-1 inch thick bone-in New York Strip Steaks
- 2 Tbs extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp coarsely ground black
Avocado Butter
- 2 ounces sweet cream butter, softened
- 1 medium avocado, mashed
- 1 clove garlic, minced
- 2 Tbs chives, minced
- 1 Tbs fresh lemon juice
- 1/2 tsp white pepper
Directions
To make avocado butter, thoroughly mix butter, avocado, garlic, chives, lemon juice, and white pepper. Using a piece of parchment paper, roll the butter into a cylinder shape. Place in the freezer for 15 minutes.
2. Season steaks with olive oil, salt, and pepper. Let rest 15 minutes at room temperature.
3. Preheat cast iron pan over medium-high heat. Place steaks in skillet and cook for 4-5 minutes. Flip and continue cooking for 5-6 minutes or until an internal temperature of 130º is reached for medium-rare. Remove from heat, top with avocado butter. Tent loosely with aluminum foil and let rest 5 minutes. Serve.
