Cowboy Caviar With Chile-Lime Dressing

If you are hosting a Memorial Day celebration, BBQ or graduation party or attending one as a guest, you should make this Cowboy Caviar recipe.

It’s a fresh and delicious bean dip that I think is more of a bean salad that is full of crunch and flavor.  I partnered with Kuner’s Beans of Colorado to create this recipe and video to bring you a delicious inspiration for your summer cookouts.  This appetizer or side dish is super easy to make and requires a few ingredients that you likely already have on hand.

It’s budget-friendly as well!

Simply combine three varieties of beans with corn, tomatoes, fresh jalapeno, red onion and cilantro and top with a flavorful chili-lime dressing.   It takes less than 20 minutes to pull the whole dish together, which is my kind of appetizer.  You can serve right away, but I find it’s better to let it sit covered with plastic wrap in the refrigerator for an hour or so to let the dressing soak into the beans and enhance the flavors even more.  You can even leave it in the refrigerator overnight.

I made this for my nephew’s graduation party last weekend and I thought we would have plenty of leftovers since I made a double batch, but the entire salad disappeared within the first hour of the party and the guests raved about it.

Cowboy Caviar Recipe

Ingredients:

  • 1 (15oz) can Kuner’s® Black Beans (drained, rinsed)
  • 1 (15oz) can Kuner’s® Navy Beans or Great Northern Beans (drained, rinsed)
  • 1 (15oz) can Kuner’s® Pinto Beans (drained, rinsed)
  • 1 (15oz) can Kuner’s Whole Kernel Corn (drained)
  • 2 large tomatoes, seeded, diced
  • diced 1 jalapeno chile, seeded, ribs removed, finely diced
  • 1/2 small red onion, diced
  • 1/2 cup chopped fresh cilantro
  • juice of 1 – 2 limes
  • 1/2 cup olive oil
  • 1 tbsp chili powder
  • 1/2 tbsp salt
  • 1/2 tbsp pepper

Directions:

  • In large bowl, mix the beans, corn, tomatoes, jalapeno, onions and cilantro.
  •  In a separate bowl or mason jar combine olive oil, lime juice, salt, pepper and chili powder to create dressing.  Stir or shake well to combine.
  • Pour dressing over bean salad and stir until combined.  Serve immediately or cover and refrigerate several hours to blend flavors

Serving Tips:

Serve as a dip with chips or serve as a salad over a bed of lettuce.  This bean salad can also be served over meat or seafood tacos, fajitas or quesadillas.

If you want more lime flavor, you can always add the zest of the lime to the dressing as well.  Simply zest the lime before you cut it to squeeze the juice.
