Gluten-Free Blackberry Cobbler

Ingredients in Gluten-Free Blackberry Cobbler

Filling

  • 2 cups fresh blackberries (mixed berries can also be used)
  • 1 tablespoon ground cinnamon
  • 1/4 cup coconut sugar
  • 2 teaspoons lemon juice
  • 1 tablespoon arrowroot (corn starch can also be used here)

Cobbler Topping

  • 1 cup almond flour
  • 1/2 sliced almonds, chopped
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/4 cup coconut flakes

How to Make a Gluten-Free Blackberry Cobbler

 

Preheat the oven to 350° F. Lightly grease an 8″ baking dish and set it aside.
 
In the baking dish, add the blackberries, cinnamon, coconut sugar, lemon juice, and arrowroot starch and mix well.
 
In a medium bowl, mix the almond flour, chopped almonds, coconut sugar, coconut flakes, and coconut oil until the mixture resembles a coarse meal.  Use your fingers to
crumble the mixture slightly. 
 
Sprinkle the topping all over the top.
 
Place in the oven and bake for 25 minutes, or until golden brown.
 
Remove the cobbler from the oven and serve immediately.
