Irish Soda Bread

 

Celebrate St. Patrick’s Day with this classic Irish Soda Bread! Made with a variety of quality ingredients available exclusively at your local store, whip up this festive favorite to bring the luck of the Irish this holiday.

Traditional Irish Soda bread was made with just 4 ingredients – flour, baking soda, buttermilk and salt. It was a bit more crumbly and dry and dense than the modern-day versions that include butter and sugar.   The bread would rise through the reaction of the baking soda and buttermilk. 

This recipe has just a hint of sweetness from a touch of white sugar and raisins, which make it an excellent soda bread recipe.  There is also a bit of baking powder in the recipe to give the bread a lighter and chewier texture.  The bread is still dense, but it makes an amazing toast slathered with butter.  It’s also perfect for sopping up soup and as aside to corned beef and cabbage. 

Ingredients in Irish Soda Bread

  • 3 cups Signature SELECT® all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons Signature SELECT® baking soda
  • 3 tablespoons Signature SELECT® granulated white sugar
  • 1/2 teaspoon Signature SELECT® table salt
  • 1 tablespoon O Organics® caraway seeds (optional)
  • 1 stick (4 oz.) Open Nature® European style butter, cold, cut up into 1/2-inch cubes
  • 1 1/4 cups Lucerne® buttermilk
  • 1/2 cup currants or Signature SELECT® dark seedless raisins
  • 1 large Lucerne® egg (for brushing top)

 

How to Make Irish Soda Bread

 

Heat oven to 350°. Line the bottom of a baking sheet or cast-iron skillet with parchment and grease with non-stick cooking spray or butter.

Combine baking powder, baking soda, flour, sugar, salt, and caraway seeds in a large mixing bowl.

Add butter cubes and cut into the dry ingredients with a pastry cutter or with your fingers until they are the size of small peas. Stir in raisins and buttermilk; mix lightly with a wooden spoon until a dough just forms.

Turn dough out onto a lightly floured surface and knead slightly and form into one 7” diameter round, using more dough as needed since the dough is sticky.

Place on prepared baking sheet. In a small bowl, whisk the egg until combined; brush the top with egg. Use a sharp knife to cut an ‘X’ into the top of the loaf.

Place in oven and bake about 35 minutes until a toothpick inserted in the center of the bread comes out clean.

Cool on a wire rack, cut, and serve with Open Nature® European style butter and Signature SELECT® preserves of your choice.
