Classic Tuna Melt

Tuna melts are healthy, protein-packed open-faced sandwiches of light tuna salad served over a whole-grain English muffin with melty provolone cheese.  A perfect meal for lunch, or a quick and easy dinner when you have just 15 minutes to get a meal on the table. 

Last week when we were visiting my mother-in-law in Florida, she was going on and on about the deli tuna salad at a local market in Naples.  It was delicious, but certainly not worth the $5.99/lb price point that she paid for it.  I told her I could replicate it so I read the label and my tuna salad recipe is even better!  I used it to make open-face tuna melts that everyone loved!

I know that some tuna melts are served with two slices of toasted bread, but I prefer my tuna melt served open-faced on a toasted whole-grain English muffin.  I also keep it super simple with no tomatoes on the sandwich.  As much as I love tomatoes, I like a tuna melt to have a classic tuna salad and melty cheese flavor and the juices of the tomato sometimes get in the way and make it super messy. 

My kids and everyone I’ve served this tuna melt raves about it because it’s simple, easy to make and absolutely delicious.  The perfect balance of creaminess from a touch of mayo, tanginess from Dijon mustard, zestiness from lemon, and crunch from celery.  It’s simply the best tuna melt!

Ingredients in Tuna Melt

Makes 4 sandwiches

  • 2 5-oz cans Albacore tuna, drained 
  • 1 tablespoon mayo
  • 1.5 tablespoons Dijon mustard
  • 1 celery stalk, diced
  • 1 tablespoon shallot or red onion, finely diced
  • zest of one lemon and juice of half a lemon (1 1/2 tablespoons)
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 whole-grain English muffins
  • 4 slices of provolone cheese

How to Make a Tuna Melt

In a medium bowl, combine the drained tuna, mayo, Dijon mustard, diced celery, diced shallot, lemon zest and juice, salt, and pepper.  Stir well until fully incorporated.  Taste for seasoning and adjust accordingly. 

This recipe is light on mayo because that’s how I like my tuna salad.  If you like more mayo, feel free to add an extra teaspoon or so. 

Preheat the broiler.  

Slice the English muffins and toast – either toast under the broiler for 2 minutes or use a toaster. 

Spread the tuna salad mixture over the toasted English muffins.  Top with a slice of Provolone cheese.  

Place under the broiler for 4-5 minutes until the cheese is melted and slightly golden. 

Serve with crunchy cucumbers, thinly sliced celery halved cherry tomatoes topped with salt and pepper, or some crunchy chips. 

Note – if you like to eat your tuna melt with tomatoes, add the tomato slice on top of the tuna salad before you add the cheese.
