Apple Spice Granola Muffins

Crunchy and crisp, these Apple Spice Granola Muffins are sure to become a family favorite for breakfast! Chunks of juicy apples and tasty oats make for a sweet, hearty, and moist muffin. Sprinkle the tops with sliced almonds and extra granola for a crunchy muffin top.

Apple season is here and Safeway has a fabulous price on apples this week – just $.97/lb.  It’s the perfect time to make some apple muffins, apple butter and apple cake!

These granola muffins are made with pre-made granola, real apples, and a cinnamon-spiced batter.   You layer granola at the bottom of each muffin cup and it softens as it bakes with the crisp apples and muffin batter.  

Slather with some homemade apple butter for a perfect treat for breakfast, after school or even as dessert.   

Ingredients in Apple Granola Muffins

  • 11 tablespoons granola
  • 2 tablespoons canola oil
  • 1/2 cup brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 3/4 cup whole wheat flour
  • 1/4 cup unbleached white flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup low-fat buttermilk
  • 2 cups diced apple (with skin) (about 1 large)

How to Make Granola Muffins

Preheat oven to 375º. Line the cups of a muffin pan with paper or foil liners. Sprinkle 1 1/2 teaspoons granola in the bottom of each muffin liner.

In a mixing bowl, beat canola oil, brown sugar, vanilla extract, and egg together until light and fluffy, scraping sides of the bowl a couple of times.

In a large measuring cup, combine the flours, baking powder, and salt and whisk to blend. Add flour mixture and buttermilk, all at once, to egg mixture in mixing bowl. Beat on low speed just until blended, scraping down the sides of the bowl after 5 seconds. Stir in diced apples.

Divide batter between 11 muffin cups (about a scant 1/4 cup each). Sprinkle 1 1/2 teaspoons of granola over the top of each muffin. Press down gently with a spoon so it sticks nicely to the batter. Bake for 20 minutes, or until muffins are lightly browned and the tops spring back after being pushed.
