Avocado Shrimp Salad

Perfectly seasoned shrimp is tossed with fresh tomatoes and creamy avocado, topped with a zesty lime dressing in this delicious Avocado Shrimp Salad.  

An easy recipe to make any time you have shrimp and avocados on hand. This is a light salad, perfect served on its own, or over a bed of Romaine if you want an extra crunch. 

This is fantastic served with tortilla chips or on a charred flour tortilla. 

Ingredients

  • Shrimp, peeled and deveined, tails removed
  • Cajun Seasoning
  • Avocado, chopped
  • cherry or grape tomatoes, sliced in half
  • 2 tablespoons Cilantro, minced
  • 1 teaspoon jalapeno, diced
  • 1 teaspoon Fresno chili pepper, diced
  • Juice of 2 limes
  • 1/4 plus 1 tablespoon olive oil
  • salt and pepper to taste
  • red onion (optional)

 

How to Make Avocado Shrimp Salad

This is an incredibly easy recipe to make,  Simple, clean ingredients 

Heat a large non-stick skillet over medium-high heat.  Add 1 tablespoon of olive oil. 

Sprinkle Cajun seasoning blend over the shrimp in the skillet and cook for 4 minutes on each side until it’s no longer translucent and cooked through.  Remove from the heat and allow to cool slightly. 

In a large bowl, combine chopped avocado, tomatoes, minced cilantro, minced jalapeno, shrimp and diced red onion (if using). 

Meanwhile, mix together olive 1/4 cup oil, the juice of a lime, salt, and pepper in a small bowl until combined.  Pour it over the salad and enjoy.
