Weekly Meal Plan
Here is a weekly meal plan that highlights family-friendly meal ideas that you can make for a week’s work of dinners, two breakfasts, and lunches using sale ingredients at Safeway. My objective is to keep the meal plan under $100 per week, have one meatless meal, at least one seafood meal, and each recipe will feed 5.
You can always halve the recipes if you have a smaller household. I always plan my meals around protein and produce sales.

- Sunday: Brown Rice Salad with Cajun Shrimp
- Lunches: Mediterranean Tuna Stuffed Avocados, salad, leftovers
- Breakfast: Breakfast Burritos, Loaded Baked Egg Muffin Cups, waffles, cereal
Pork Schnitzel With Clementine Brussels Sprouts Salad
German pork schnitzel is an easy recipe and it’s perfect for busy weeknights. The pork chops are pounded into thin, tender cutlets which are breaded and sautéed, resulting in a crispy crust and juicy center.
Since we are frying the pork and using breading, we are keeping the side dishes light with a delicious salad. The citrus in the salad compliments the citrus used in this pork schnitzel recipe from Natasha’s Kitchen. If you want a carb, I would serve this schnitzel with rice pilaf or red potato salad.
