Honey Lime Grilled Salmon with Strawberry Jalapeno Salsa

A perfect sweet and zesty marinade – this honey lime grilled salmon is a perfect meal on its own, but salmon topped with a strawberry jalapeno salsa takes the flavor profile to the next level.

Salmon makes a regular rotation at our house and I’m always looking for new ways to prepare it to keep it fresh.  This honey lime salmon marinade has become a favorite in my household.  It’s slightly sweet, zesty and super flavorful.  I serve it with a salad or a bowl of lime rice to keep it fresh and light!  The kids love it too, which is bonus points for me.

The strawberry jalapeno salsa is an ode to fresh strawberry season.  The heat of the pepper is offset by the sweetness of the strawberries for a perfect combo!  It balances the flavors in the salmon perfectly!

 

 

How to Make Strawberry Jalapeno Salsa

  • 1 1/2 cups fresh strawberries, hulled and chopped
  • 1 jalapeno, seeded and diced
  • 1/3 cup red onion, diced
  • 1 lime juiced
  • 1/3 cup parsley, chopped
  • salt and pepper to taste

Honey Lime Grilled Salmon

  • 2 1/2 lbs. of salmon
  • 1/3 cup unsalted butter, melted
  • 1/4 cup honey
  • 4 cloves of garlic, minced
  • 1 lime juiced
  • 1/4 cup parsley
  • salt and pepper to taste

Preheat the grill to medium-high heat.

Prepare the marinade by combining melted butter, honey, the chopped parsley, lime juice, garlic, salt and pepper in a small bowl.  Stir to combine.

Place the salmon on a large piece of foil and fold the edges of the foil up to create a “vessel” to hold the marinade and the salmon.  Pout the marinade over the salmon in the foil and place it on the grill.

Grill the salmon for 12 – 15 minutes until fully cooked.  It should flake easily with a fork and the internal temperature should be 145 degrees.  Do not overcook the salmon, otherwise, it will be dry.

Alternatively – you could bake the salmon on a 375-degree oven for 15 – 18 minutes.

While the salmon is cooking, prepare the strawberry jalapeno salsa.

Mix the salsa ingredients in a bowl and stir to combine.

Top the grilled salmon with the salsa and enjoy.

The salsa will last 1-2 days in the refrigerator.  It’s a delicious topping for grilled fish or chicken, and also makes a delicious salsa to eat with chips.
