Miso Maple Glazed Salmon Sheet Pan Dinner

An easy, yet impressive meal, this miso maple salmon recipe comes together in under 30 minutes, making it ideal for weeknight cooking.  Salty miso paste and sweet maple syrup combine with ginger, garlic and soy to create a delicious miso glaze for the fish. 

Pair with rice, noodles or riced cauliflower for an epic Asian-inspired weeknight dinner.

What is Miso?

At its most basic, miso is a Japanese seasoning paste that is produced by fermenting a mixture of soybeans with salt and a mold called koji that’s been cultivated from rice, barley, or soybeans. 

The result is a thick paste used for sauces and spreads, pickling vegetables, fish, or meats, and adding to soups.  The flavor profile of miso can be described as salty, sweet, earthy, fruity, and savory or umami.  

Miso fermentation helps improve the body’s ability to digest and absorb foods. The condiment also contains probiotics that can promote gut health and digestion.

You can find miso paste at Safeway in the International food aisle with the Asian sauces.  Safeway carries the Roland brand of White Shiro Miso.  While you only need one tablespoon for this recipe, miso lasts forever as long as it’s stored properly and the flavor is irreplaceable.  Once you have it on hand, you can experiment with new recipes using miso.  A few of my favorites include miso-glazed cod,  miso soup, and this pomegranate miso salmon

How should you store miso?

You can keep miso in an airtight container in the refrigerator indefinitely, though it may get darker or denser over time. You can also store it in the freezer, which will not change its texture or flavor.

 

Ingredients

  • 1 1/2 pounds salmon, cut into 4 6-oz pieces
  • Kosher salt
  • Freshly ground black peppers
  • 1 tablespoon miso paste
  • 5 teaspoons maple syrup
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons soy sauce
  • 1 garlic clove, grated
  • 1-inch nob of fresh ginger grated
  • 1 tablespoon sesame oil
  • 1 bunch broccolini
  • pinch red pepper flakes

How to Make Maple and Miso Glazed Salmon 

Season the salmon with salt and pepper. 

In a pie plate or shallow bowl, whisk together the miso paste, maple syrup, rice wine vinegar, soy sauce, garlic and ginger.  Place the salmon fillets in the marinade and turn to coat evenly.  Allow the salmon to sit in the marinade for 30 minutes, or up to 2 hours.  The longer it marinades, the more flavor it imparts onto the salmon. 

Heat the oven to 400° F and line a sheet pan with parchment paper or foil. 

Place the salmon fillets onto the sheet pan, skin side down.  Add the broccolini to the pan and drizzle the broccolini with sesame oil, then season with salt and pepper and a pinch of red pepper flakes. 

Bake until the salmon is cooked through and opaque for about 12 – 15 minutes. 

Serve with rice, noodles, or cauliflower rice.

  • Place the salmon fillets onto the sheet pan, skin side down.  Add the broccolini to the pan and drizzle the broccolini with sesame oil, then season with salt and pepper and a pinch of red pepper flakes.
  • Bake until the salmon is cooked through and opaque about 12 - 15 minutes.
  • Top with sliced green onions and serve with rice, noodles, or cauliflower rice.
