Peanut Butter Raspberry Breakfast Bars
A cross between raspberry baked oatmeal, and raspberry oatmeal bars, these raspberry oatmeal breakfast bars are a healthy and delicious option using fresh or frozen raspberries.
Oats and bananas provide slow-release energy in this grab-and-go baked raspberry breakfast bar recipe. A little peanut butter and white chocolate drizzle add an indulgent note that ties the flavors together.
Making breakfast ahead of time and having it ready in the fridge for a quick grab-and-go option is ideal so you don’t have to think about what the family is eating in the morning. These bars are naturally sweetened with bananas and a touch of brown sugar or you can sub coconut sugar and they have great protein with the addition of Greek yogurt and whole rolled oats.
Save on fresh berries on sale at Safeway this week as well as oats and peanut butter to make this budget-friendly breakfast bake. You can either keep it in the baking dish and serve it like baked oatmeal, or slice it into bars for a grab-and-go option.
It’s definitely on the soft and crumbly side with the addition of the bananas, so you’ll need a napkin if you take it on the go!
Ingredients in Raspberry Oatmeal Breakfast Bars
- 2 large ripe bananas, mashed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil
- 5.3 oz cup Greek yogurt (vanilla or plain)
- 1/4 cup peanut butter
- 1/4 cup brown sugar (light or dark)
- 2/3 cup rolled oats
- 1/3 cup all-purpose flour
- ½ tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1 cup raspberries (frozen or fresh)
Peanut Butter Chocolate Drizzle
- 1 tablespoon creamy peanut butter
- 1/4 cup white chocolate chips
How to Make Raspberry Peanut Butter Baked Oatmeal
- Preheat the oven to 375℉. Spray a 9×9 or 8×8-inch baking dish with cooking spray and line with parchment paper and set aside.
- In a bowl, mash the bananas with a fork until smooth, add the egg, vanilla extract, melted coconut oil, Greek yogurt, and peanut butter, stir to combine.
- Add the rolled oats, flour, baking powder, and cinnamon and stir until combined.
- Fold in the raspberries.
- Transfer to the prepared dish. Top with a few additional raspberries.
- Bake for 40 to 45 minutes or until the center is set.
- Let sit for 10 minutes before topping with the peanut butter white chocolate drizzle.
- Mix together white chocolate chips and peanut butter in a microwave-safe bowl. Microwave for 1 -2 minutes until melted. Stir to combine.
- Drizzle the top with melted chocolate and peanut butter topping.
- Slice into bars and enjoy them for breakfast or a healthy afternoon snack.
Serve warm or cold.
