Spinach Artichoke Pizza 

Creamy white garlic sauce topped with spinach, artichokes, onions, and three kinds of cheese make up this delicious spinach artichoke pizza.  A perfect meatless Monday meal, and an amazing game day meal that comes together in under 30 minutes!  Easy to make and cheaper than delivery!

In honor of National Pizza Day, we are sharing this delicious garlicky spinach artichoke pizza.  This recipe will elevate your weekly pizza night above the usual pepperoni or veggie pizza.  Tangy feta, salty parmesan and melty mozzarella are used to add depth of flavor and amazing texture to this pizza. 

We used the Lucerne Whole Milk low moisture mozzarella cheese, which melts beautifully and adds delicious cheesy flavor.  While you can use any mozzarella, try this low moisture cheese one time and you will be hooked for all future homemade pizza making!

Spinach Artichoke Pizza

  • prepared pizza dough – we used store bought dough from Safeway’s deli, but if you have a favoite homemade dough, that is even better for this pizza
  • yellow onion – the first layer of flavor in the pizza is a diced yellow onion that is mixed with spinach and chopped artichokes to give us great texture and flavors. 
  • garlic – you can’t have a pizza without garlic and there is lots of garlic in this pizza.  If you like garlic – you can add even more garlic either to the sauce or the filling. 
  • yellow onion – the first layer of flavor in the pizza is a diced yellow onion that is mixed with spinach and chopped artichokes to give us great texture and flavors. 
  • whole artichoke hearts – we are using canned artichoke hearts in water, not marinated in oil.  You can find these with the canned vegetables. 
  • fresh spinach – the spinach gets chopped and mixed with the artichokes as the filling for our pizza.  Frozen spinach can also be used if that’s all you have on hand. You may need to blot the liquid slightly before adding to your pizza if using frozen spinach. 
  • 2 oz feta cheese, crumbled
  • 6 oz mozzarella cheese, shredded

White Pizza Sauce

  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 2 1/2 tablespoons flour
  • 1 cup milk
  • 1/4 cup parmesan cheese, grated
  • salt and pepper to taste

How to Make Spinach Artichoke Pizza

Bring the pizza dough to room temperature.

Preheat the oven to 425° F. 

Sprinkle 1 tablespoon of flour on a sheet of parchment paper.  Roll and stretch the pizza dough out on the parchment paper until desired thickness.  It can be round, oval, or rectangular. Transfer the parchment paper with the dough to a baking sheet. 

Prepare the white pizza sauce by melting the butter in a small saucepan.  Add the minced garlic and cook for 1 minute until fragrant.  Add the flour to the pot and whisk until the flour is cooked for about 1 minute.  Add the milk, whisking vigorously until combined.  Continue cooking the roux, whisking frequently until thickened (about 3 minutes). 

Add the parmesan cheese and stir until melted and combined.  Season with salt and pepper.  Remove from the heat and set aside.  

In a large non-stick skillet heat the olive oil then add the diced onion.  Cook for 2-3 minutes until softened.  Add the minced garlic and cook until fragrant (one minute).   

Add the chopped spinach and chopped artichoke hearts to the pan and stir to combine.  Cook just until the spinach is wilted.  Remove from heat. 

Assemble the pizza by spreading the white pizza sauce layer on the prepared dough, then the spinach artichoke filling.  Top with crumbled feta cheese, then with shredded mozzarella cheese. 

Bake for 18 to 20 minutes until the crust is brown and the cheese is melted.
