Blueberry Smoothie Bars – Perfect for Blueberries on Sale at Safeway

Fruitastic and gluten-free, 5 ingredient Blueberry Smoothie Bars are a hit! We love that they’re low fat and packed with healthy ingredients. You’ll love that they’re absolutely delicious!

Take advantage of the HOT sale on fresh blueberries at Safeway this week and make these delicious fruit-filled blueberry smoothie bars.  You can even add a tablespoon of your favorite protein powder if you wish to ramp up the protein factor in these delicious smoothie bars.

Try the NEW O Organics coconut cream, available in the Asian food aisle next to the canned coconut milk as the liquid for the bars.  It’s rich, creamy and will give these bars a subtle coconut flavor that makes them irresistible.

Blueberry Smoothie Bar Ingredients

  • 2 cups of your favorite granola
  • 2 ripe bananas (frozen)
  • 3/4-1 cup O Organics™ frozen wild blueberries or fresh blueberries
  • 1/4 cup coconut cream (the full-fat cream from a can of coconut milk)
  • 1/2 cup raw cashews (soaked overnight)
  • 1 tablespoon fresh lemon juice

How to Make Blueberry Smoothie Bars

Step 1

Line an 8×8 pan with parchment paper. Sprinkle granola evenly on the bottom of the pan, so it covers the bottom.

Step 2

Drain cashews first, then add the soft cashews to a food processor or high-powered blender, along with the coconut cream, blending until smooth. Scrape down the sides of the processor as you go, and pulse until the mixture is smooth.

Step 3

Add bananas, and pulse until the mixture has an ice cream-like consistency. Add frozen blueberries and lemon juice, pulsing until everything is incorporated. The mixture can be as chunky or smooth as you like.

Step 4

Scoop mixture on top of granola (it will be thick!), and carefully smooth the fruit mixture evenly over granola. Top with more blueberries and toasted coconut.
