Healthy Coconut Shrimp – Air Fryer and Keto-Friendly
This Air Fryer Coconut Shrimp recipe is like your favorite restaurant-style version but only healthier because you skip the heavy oil and deep-frying. With just four simple ingredients, this healthy coconut shrimp is easy to make and delicious to enjoy as an appetizer, snack or make into a bowl for a more substantial meal.
Since this shrimp uses almond flour and real coconut flakes for the “breading”, it is healthier than the breaded and fried version you buy frozen or get at any restaurant. Also, because we are using an air fryer, the recipe isn’t fat-laden from oil like traditional fried coconut shrimp.

Ingredients in Air Fryer Coconut Shrimp
- 1 lb. Waterfront BISTRO Raw Shrimp, peeled, deveined and tail removed
- 1/4 cup almond flour or sub coconut flour
- 1 egg, beaten
- 1/2 cup unsweetened, shredded coconut flakes
- cooking spray
- Signature SELECT Sweet Chili Sauce, for dipping, optional

Use it as a glaze, a dipping sauce, or as an ingredient to add a little sweetness and a kick of heat to your cooking.
The sweet chili sauce is made with water, sugar, pickled red chili, and pickled garlic. A perfect condiment for seafood, chicken nuggets, and more!
How to Make Healthier Coconut Shrimp
Start by cleaning the shrimp – remove the shells and tails and pat the shrimp dry. It’s easier to use when dry.
Place the almond flour in a bowl, the beaten egg in a separate bowl, and the unsweetened coconut flakes in a third bowl.
Dredge the shrimp in the almond flour first, then in the beaten egg, then place it into the unsweetened coconut flakes until it’s fully coated.
Place the shrimp in the air fryer basket in a single layer.
Spray with non-stick cooking spray, (I used coconut oil spray).
Cook at 360° for 10-12 minutes. You can check the shrimp at 10 minutes. It’s done when the coconut coating is golden brown.
Serve with the new Signature SELECT Sweet Chili Dipping Sauce.
