Pineapple Shrimp Buddha Bowl

Pineapple Shrimp Buddha Bowl Recipe
Ingredients:
- 1/2 cup fresh chopped pineapple
- 2 Tbs water
- 1 tsp extra virgin olive oil
- 1 Tbs fresh lemon juice
- pinch of kosher salt
- pinch of cayenne pepper to taste
- 3 oz jumbo or large shrimp
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
- 1/3 cup cooked quinoa
- 1/3 cup red cabbage
- 1/3 cup shelled edamame
- 1/4 cup shredded carrot
- 1/3 cup fresh chopped pineapple
- 1/4 cup mixed greens or baby spinach
How to Make Pineapple Shrimp Bowl
1. Preheat a sauté pan over medium heat. Add olive oil and let heat for 30 seconds. Add shrimp, salt, and pepper. Cook 2-3 minutes, each side, until pink and no longer opaque. Remove from heat and let cool.
2. In a blender, mix all dressing ingredients until smooth.
3. Arrange quinoa, cabbage, edamame, carrot, and pineapple in a serving bowl. Top with shrimp and microgreens. Drizzle with dressing. Serve.
Pro Tips:
1. Eating on the run? Layer these ingredients in a mason jar, starting with the dressing on the bottom, then quinoa and vegetables and shrimp on the top. Easy and nutritious “fast food!”
2. Tuna or chicken could be used instead of shrimp.
