Pineapple Shrimp Buddha Bowl

This Pineapple Shrimp Buddha Bowl can easily be taken on the go! Simply layer ingredients in a mason jar (dressing first) and take your lunch on the road!

Pineapple Shrimp Buddha Bowl Recipe

Ingredients:

Dressing
  • 1/2 cup fresh chopped pineapple
  • 2 Tbs water
  • 1 tsp extra virgin olive oil
  • 1 Tbs fresh lemon juice
  • pinch of kosher salt
  • pinch of cayenne pepper to taste
Bowl
  • 3 oz jumbo or large shrimp
  • 1/8 tsp kosher salt
  • 1/8 tsp ground black pepper
  • 1/3 cup cooked quinoa
  • 1/3 cup red cabbage
  • 1/3 cup shelled edamame
  • 1/4 cup shredded carrot
  • 1/3 cup fresh chopped pineapple
  • 1/4 cup mixed greens or baby spinach

How to Make Pineapple Shrimp Bowl

1. Preheat a sauté pan over medium heat. Add olive oil and let heat for 30 seconds. Add shrimp, salt, and pepper. Cook 2-3 minutes, each side, until pink and no longer opaque. Remove from heat and let cool.

2. In a blender, mix all dressing ingredients until smooth.

3. Arrange quinoa, cabbage, edamame, carrot, and pineapple in a serving bowl. Top with shrimp and microgreens. Drizzle with dressing. Serve.

Pro Tips:
