4th of July Weekend is upon us.  Are pork spare ribs on your menu?  With the great sale price of just $1.67/lb at Safeway, they should be!
Mix it up this year and rather than slathering your pork spare ribs in BBQ sauce, prepare a savory rub with sage, oregano, garlic, and a little heat from some red pepper flakes.
This is a great way to prepare ribs and really brings out the delicious flavor of the meat, rather than just tasting BBQ sauce.

While the method of preparation calls for these to be done in the oven, you can always put them in a smoker or put them on the grill at the end of the cooking process so that they get that smoky grilled flavor.

This would be perfect served with homemade sweet and smokey BBQ beans, red potato salad and grilled peach sundaes for dessert!

Sage Rubbed Pork Spare-Ribs Recipe

Ingredients

1 Tbs extra-virgin olive oil
/4 cup finely chopped sage
1/4 cup chopped oregano
4 cloves of garlic, minced
1 tsp kosher salt
1/2 tsp red pepper flakes

Directions

1. Preheat oven to 300º. In a small mixing bowl, combine sage, oregano, garlic, salt and red pepper.

2. Place a large piece of aluminum foil on a rimmed baking sheet. Place ribs in center of aluminum foil. Rub both sides with olive oil and spice rub. Seal ribs in aluminum foil and place in oven for 2 hours.

3. Remove from oven and remove ribs from aluminum foil, placing directly on the baking sheet. Reduce oven temperature to 275º and bake for an additional 30 minutes.
