Gingerbread French Toast

This delicious gingerbread french toast bake is full of warm spices like cinnamon, ginger, allspice to make a perfect vegan casserole for the holidays. 

Ingredients

  • 1 (24 ounce) sourdough bread loaf or Brioche, cut into 1/2 inch slices
  • 2 cups coconut or nut milk
  • 1/3 cup pure maple syrup
  • 1 tablespoon cornstarch
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground allspice
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt

Toppings

  • 2 tablespoons vegan butter or coconut oil, melted
  • 1/2 cup chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup superfine almond flour
  • 3 tablespoons raw cane sugar

How to Make Vegan French Toast

Preheat oven to 350º.

Spray a 9×11 baking dish with non-stick cooking spray. Cut each slice of bread in half, and add the half-slices to the baking dish in 3 rows.

In a medium-sized bowl, whisk coconut milk, maple syrup, cornstarch, cinnamon, ginger, allspice, vanilla, and salt.

Slowly pour the liquid mixture on top of bread slices, gently separating bread slices with your hands, and pouring the liquid mixture in between each slice.

Melt vegan butter (or coconut oil) in a small bowl and add in pecans. Sprinkle in almond flour, cinnamon, and raw cane sugar and stir. Sprinkle mixture over french toast slices. Cover with foil and bake for 20 minutes. Remove foil and bake 20 minutes more.
 
Remove and serve immediately. Enjoy!
 

Walnuts or almonds may be used in place of the pecans for the topping.

Top with vegan whipped cream or pure maple syrup.
