Safeway Weekly Meal Plan February 15th – 21st 

Here is a sample meal plan for the week that highlights meal ideas that you can make for a week’s work of dinners, two breakfasts, and lunches using sale ingredients at Safeway.  My objective is to keep the meal plan under $100 per week and each recipe feeds 5. 

You can always halve the recipes if you have a smaller household.   This week’s protein focus is chuck roast, ground beef, chicken, tuna, scallops and salmon.  

  • Monday: Honey Garlic Salmon with asparagus and rice
  • Tuesday: Peppered Cross-Rib Roast with carrots and potatoes
  • Wednesday: Korean Beef Lettuce Wraps
  • Thursday: Green Chile Slow Cooker Tacos
  • Friday: Scallop Scampi with steamed broccoli
  • Saturday: Pot Roast Pizza using leftover chuck roast
  • Sunday: Tuna Patties with Roasted Asparagus, Chickpea & Tomato Salad
  • Breakfast Options: peanut butter chocolate smoothie, Cereal, oatmeal, scrambled eggs, toast, strawberry overnight oats
  • Lunches: leftovers, tuna sandwiches, salads and a big pot of white bean soup

Honey Garlic Butter Salmon 

Salmon is a staple in my weeknight cooking because the whole family loves it, it’s easy to prepare and it’s healthy!  Salmon is on sale this week – so pick some up to make this delicious honey garlic salmon for dinner.  Serve with rice and roasted asparagus for a meal on the table in just 20 minutes.   This happens to be the most popular recipe on the blog (according to google). 
 
Try it with Safeway’s new Signature SELECT Spicy Honey – it’s spicy but so good!  It would make an amazing sauce for this salmon.

Peppered Cross-Rib Roast

 
With Cross-Rib Roasts on sale for $2.97/lb, it’s the perfect time to make a roast for the family.  Serve with whole baby potatoes, carrots, onion and celery for a scrumptious roast everyone will love.

Korean Beef Lettuce Wraps

Using the Prairie Legacy Grass-Fed Beef on sale for just $5, it’s the perfect time to make Korean Beef Lettuce Wraps.  You can serve with rice if you wish, or load up on crunchy butter lettuce leaves and a side of steamed veggies for a lower-carb alternative.

Green Chile Chicken Tacos

Tender, juicy chicken simmering in aromatic spices and green chiles make the perfect Green Chile Slow Cooker Chicken Tacos for an easy weeknight meal the whole family will enjoy.  Budget-friendly, especially when you use chicken breasts on sale for $1.97/lb. at Safeway.  Let the slow cooker do its magic, shred the chicken, and serve as tacos in toasted tortillas.

Scallop Scampi

Pick up a bag of scallop pieces on sale for $6.99 at Safeway through February 23rd and treat the family to a delicious scallop scampi for the first Friday of Lent.  Save the fish sticks and French fries for another time!   Serve with a side of steamed broccoli if you want extra veg.

Pot Roast Pizza

Use up the leftover cross rib roast to make pot roast pizza for Saturday night dinner.  Serve with a side salad or steamed vegetables and you’ll have a delicious dinner in under 30 minutes so you can get back to binge-watching your favorite show or family game night with the kids.

Tuna Patties

Because we were a bit indulgent with the salmon and scallops this week, we are going to keep Sunday dinner light with these tuna patties that you can prepare in under 20 minutes and pantry staples.   Take advantage of the sale on Starkist Chunk Light Tuna for $.49 a can through February 16th or pick up albacore tuna for $.99 a can starting February 17th.
