Safeway has boneless, petite sirloin steak on sale this week.  It’s the perfect time to make a few beef recipes.   Safeway’s beef is cut fresh in-store daily and is sourced from local Colorado ranchers.  It has the USDA Choice Angus Beef certification, so you know it is high quality and fresh. 

What is Petite Sirloin Steak and how does it differ from Top Sirloin?

Also known as tip sirloin, this less expensive cut comes from the loin region of the cow.  The steak is thin-cut, lean, and tender, but because it does not have a lot of marbling, it tends to be a steak that lends itself to marinades or tenderizing. 

The top sirloin is a naturally lean, thick cut of steak with a bold, beefy flavor. This popular steak is delicious on its own, adds huge flavor to recipes, and cooks well with marinades and sauces. Top sirloin is a favorite grilling steak that’s lean enough and affordable enough to enjoy any night of the week.

How to Cook Petite Sirloin Steak 

Petite sirloin steak is most often reserved for thinly slicing and using in pan-seared recipes, as well as grilling or broiling. Pan-searing petite sirloin steak quickly locks in its juices, creating a rich brown crust with tender, flavorful meat inside.

 

How to Grill Petite Sirloin Steak

The first step to grilling a perfect steak is to let the meat come to room temperature before you grill. Let the steak sit at room temperature for 20 minutes before grilling.  This ensures even cooking throughout.

Flavoring the steak before you grill is essential.  There are two options for flavoring a steak: dry rub or marinade, and both result in a flavorful steak every time. 

To grill petite steaks, first, marinate in your favorite sauce and seasonings for at least 30 minutes.   Try this steak marinade recipe for a perfect grilled steak every time.  

Heat the outer 2 sides of the grill to high heat – like 450° F and leave the center grill off to create a direct and indirect heat zone.  

Place the whole steaks on the grill over direct heat and sear for about three minutes per side.  Transfer the steaks to indirect heat until they reach medium-rare or 140° using a meat thermometer, the temp at which steak tastes best.   

Allow the steak to rest three to five minutes before serving for the juices to become redistributed throughout the meat.
