Peach Overnight Oats With Almonds and Honey

Fresh, sweet peaches and crunchy almonds top creamy peach overnight oats blended with cinnamon, honey, and nut milk for a perfect make-ahead breakfast that is easy to make and delicious!

I’m holding onto summer as long as I can with these Peach Overnight Oats for breakfast every morning. 

Healthy with fiber, protein, whole grains, and healthy fats, overnight oats are a perfect make-ahead breakfast that you can grab and go for busy mornings. 

Kids and adults love overnight oats and they are so healthy for your digestive system and get everything moving along if you know what I mean!

 

What are overnight oats?

We have a couple of overnight oat recipes on the blog, but I don’t know that I’ve ever explained what they are.  Rather than eat oatmeal hot, you soak old-fashioned whole oats in your milk of choice and Greek yogurt overnight. 

The oats expand from the milk and turn into creamy oat goodness.   I like to add chia seeds to my overnight oats because that pumps up the nutrition, even more, adding omega-3 fats, fiber, and protein to the oats. 

Add any toppings you want to customize your overnight oats. 

It’s best to stick with seasonal fruits, which is why we are enjoying these peach overnight oats this season. 

The fresh Colorado Palisade peaches will only be around for another week or so, then you’ll have to settle for California peaches – which are good, but not as good!

 

Ingredients in Peach Overnight Oats

  • 1/2 cup old fashioned rolled oats oats
  • 1/2 cup almond milk (or milk of choice)
  • 1/4 cup peach Greek yogurt or dairy-free yogurt (I used Silk Greek Yogurt)
  • 1 teaspoon honey
  • 1 teaspoon chia seeds
  • 1/2 teaspoon cinnamon plus extra for garnish
  • 1/2 peach, chopped
  • 1 tablespoon almonds, slivered or sliced
  • almond butter (optional)

How to Make Overnight Oats

Overnight oats are a perfect recipe to make the night before, or you can batch prepare a few for quick and easy breakfasts for the whole family.   

For the kids, I like to use leftover cleaned glass Yoplait Oui Yogurt jars.  They are the perfect size for a small portion of overnight oats, which is all my kids can handle in the morning because they are so filling. 

In a medium bowl or large measuring cup, combine the oats, milk, yogurt, honey, chia seeds, and cinnamon.  

Stir well to combine.  Pour the mixture into a glass jar, cup, or mason jar with a lid.  Cover with plastic wrap or a lid and refrigerate for a minimum of 2 hours, but overnight is best.  

Just before serving, slice the peaches and top the overnight oats with the peaches, almonds, a spoon full of almond butter (if using), and a sprinkle of cinnamon.
