What I like most about the AdapTable Meals roasts is their size and the fact that they are pre-seasoned.  The 2-3 lb. roasts are perfect for my family of five to have a meal or 2, without having leftover pork for a week as I would if I purchased a whole pork shoulder.   

If you are feeding a crowd – the pork shoulder is always great as it yields lots of shredded pork but for a single person, two people, or a family of five, a 3 lb. roast is a perfect size. 

Additionally – the seasoning blends are incredibly flavorful so it’s an amazing shortcut in the kitchen. 

I literally throw a roast in the crockpot before going to work in the morning, add an inch of water, sometimes a sliced onion and it simmers away all day making the house smell amazing and tenderizing the meat so that it’s ready for shredding! 

Before dinner, I shred the meat and serve it with a quick side.

Santa Maria Seasoning Blend

The Santa Maria Seasoning blend originated in California and is a popular blend for pork and beef.  It is comprised of a mix of the following spices and herbs.  

  • Chili Pepper
  • Black Pepper
  • Coriander
  • Mustard
  • Oregano
  • Celery
  • Sea Salt
  • Dehydrated Garlic & Onion
  • Brown Sugar
  • Garlic

While I have all those spices on hand – I don’t need them with the AdapTable Meals Roasts because the pork is pre-seasoned and ready to cook. 

The Santa Maria Style pork is flavorful on its own and is perfect for making pork tacos, quesadillas, adding to a grain bowl, or using it to make pulled pork sandwiches.

My family loves barbecue pulled pork, so we added some homemade BBQ sauce and spicy coleslaw to make a meal with the roast.

Coleslaw takes minutes to make, especially if you used the packaged cabbage mix in the produce department.   

I like to add a jalapeno or red Fresno pepper for a little heat.

Slow Cooker BBQ Pulled Pork using Santa Maria Seasoned Pork Roast 

I made my own BBQ sauce and coleslaw for this pork. I adapted the recipe from Tyler Florence’s recipe as I’ve made it before and it was excellent.  You can also use any prepared BBQ Sauce if you are short on time or if you don’t have the ingredients on hand for a homemade sauce. 

Pulled Pork Ingredients

  • 1 AdapTable Meal Santa Maria Seasoned Pork Roast
  • 1 onion, sliced
  • 1/2 cup water

Homemade Apple Cider Vinegar BBQ Sauce Ingredients

  • 1 cup apple cider vinegar
  • 3/4 cup brown mustard
  • 1/2 cup ketchup
  • 1/3 cup packed brown sugar
  • 2 garlic cloves smashed
  • 1 teaspoon kosher salt
  • 1 teaspoon cayenne
  • 1/2 teaspoon ground pepper

Cole Slaw Ingredients

  • 1 package shredded cabbage and carrot coleslaw mix
  • 3 green onions
  • 1/2 red onion
  • 1 tablespoon diced jalapeno – about 1/2 jalapeno, seeds removed
  • 1 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tablespoon apple cider vinegar
  • pinch of sugar
  • salt and pepper to taste

Hawaiian-style hamburger buns or sliders.

How to Make Pulled Pork in the Slow Cooker

Place the sliced onions on the bottom of the slow cooker.  Top with the Santa Maria Seasoned pork roast and 1/2 cup of water.

Cook on high for 6 hours or low for 8 hours.

When the pork is ready, use two forks to shred the pork in the crockpot.  Mix it with the onions and pan juices. 

Meanwhile – prepare the barbecue sauce.

Combine the vinegar, brown mustard, ketchup, brown sugar, garlic, salt, cayenne, and black pepper in a small saucepan.  Heat over medium heat, stirring gently for 10 minutes until the sugar is dissolved.  Remove from the heat until the pork is ready. 

Once the pork is shredded, add 1/2 cup of sauce to the pork and stir to combine. 

Prepare the coleslaw by tossing the cabbage, green onions, diced jalapeno peppers, and red onion in a large bowl. 

In a separate bowl, combine the mayo, dijon mustard, apple cider vinegar, salt, pepper, and sugar.  Whisk to combine.  Pour the dressing over the coleslaw mix and stir to combine. 

Serve the BBQ pulled pork on a sweet Hawaiian-style hamburger bun, topped with the coleslaw, a pickle or pickled jalapeno, and a side of homemade sauce, and enjoy. 

Note – if you prefer to make this in the Instant Pot, you would add 1 cup of water, the sliced onions, and cook for 40 minutes on the meat/setting.  Let the pressure release naturally (about 12 – 15 minutes).   Shred the meat with 2 forks in the instant pot.  Add the sauce

What to Serve With Pulled Pork

The meal is bursting with flavors – so a simple side dish is really all you need.  I paired it with a roasted purple sweet potato that I picked up from Safeway’s produce department.  The sweet potato was a perfect complement to the savory pork and the tangy slaw.
