Weekly Meal Plan January 10 – 16th

Here is a weekly meal plan that highlights family-friendly meal ideas that you can make for a week’s work of dinners, three breakfasts, and lunch ideas using sale ingredients at Safeway.  My objective is to keep the meal plan under $100 per week, have one meatless meal, at least one seafood meal, and each recipe will feed 5. 

You can always halve the recipes if you have a smaller household.   I always plan my meals around protein and produce sales. 

Sale ingredients used: chicken breasts, salmon, eggs, tomatoes, blueberries, avocados, peanut butter, pasta, cheese, $5 Salad Meal Deal

  • Monday: Roasted Tomato Soup with Grilled Cheese Sandwiches
  • Tuesday: Slow Cooker Green Chile Chicken Tacos With avocados
  • Wednesday: Sun-dried Tomato Chicken With Pasta and Steamed Broccoli
  • Thursday: Lemon Dill Caper Salmon 
  • Friday: Homemade Roasted Campari Tomato Pizza and Caesar Salad
  • Saturday: Eat out or leftovers
  • Sunday: Lemon Orzo Chicken Soup
  • Lunches: Peanut Butter & Jelly Sandwiches, tuna salad, turkey and cheese sandwiches, salads, leftovers
  • Breakfast: Peanut Butter Banana Baked Oatmeal, Spinach Mushroom Quiche, Berry Smoothie Bowls

Lunch Meal Prep

Monday: Roasted Tomato Soup and Grilled Cheese Sandwiches

Some days are just perfect for a warm, comforting soup. Our Roasted Tomato Soup is classic and hearty and only takes ten minutes to prep. Serve with a side salad or a gooey grilled cheese sandwich!
