Weekly Meal Plan February 1st
Mondays are made for meal planning!
I’m testing a new weekly feature on the blog which highlights meal ideas that you can make for a week’s work of dinners, two breakfasts, and lunches using sale ingredients at Safeway. My objective is to keep the meal plan under $100 per week and each recipe feeds 5.
You can always halve the recipes if you have a smaller household. This week’s protein focus is chicken, tuna, eggs, and pork country style ribs. Produce focus is spinach, oranges, potatoes, and tomatoes
- Daily Breakfasts: Overnight Oats with Peanut Butter & Jelly, Cereal, Toast, Spinach, Egg & Cheese Omelets, and Green Smoothies
- Monday – Spatchcock Chicken With Roasted Potatoes
- Tuesday – Chicken Pot Pie with Biscuits
- Wednesday – Mediterranean Tuna Pasta With Spinach and Feta
- Thursday – Instant Pot Country Style Ribs With Sweet Potatoes and Cole Slaw
- Friday – Keto Chicken Parmesan with Blood Orange and Fennel Salad
- Lunches – leftovers, salads, grilled cheese and roasted tomato soup plus turkey sandwiches for the kids with the $5 Extreme Value Meal Deal
- Weekend Brunch – Spinach and Feta Egg Casserole
Meal # 1: Spatchcock Chicken
Spatchcock Chicken With Roasted Potatoes – using the $.59/lb. Signature Farms Whole Chicken on sale with a digital coupon and Melissa’s baby potatoes on sale for $3.50 a bag.
The total cost for this meal is around $6.75 for 5.5 lbs. of chicken. Be sure to save the chicken carcass to make Homemade Chicken Stock, which you can reserve in the refrigerator in mason jars for future recipes that ask for stock/broth.
Meal #2 Homemade Chicken Pot Pie With Biscuits
Chicken Pot Pie With Biscuits featuring leftover roasted chicken from the Spatchcock chicken or chicken breasts on sale for $1.87/lb, $1.29 Signature Kitchens Frozen Mixed Vegetables, and $.99 Pillsbury Grands! Biscuits. There is actually a new printable Pillsbury coupon that will make the biscuits just $.67 each.
The cost for this meal is roughly $6.00.
Meal # 3 Mediterranean Tuna Pasta
Featuring the Bumble Bee Tuna pouches on sale for $.99, Barilla Pasta for $.99, O Organics Spinach, Signature Farms tomatoes on sale for $2.50, Primo Taglio Feta Cheese which is always $2.99 at Safeway, and olives and capers from the fridge.
The total cost for this meal is roughly $7.45.

Meal # 4: Instant Pot Country Style Ribs With Sweet Potatoes and Cole Slaw
Instant Pot Country Style Ribs With Mashed Sweet Potatoes using the pork country style ribs on sale for $1.49/lb.
The total cost for this meal, which actually has 7 servings is around $9.
Meal # 5: Keto Chicken Parmesan with Blood Orange and Fennel Salad

The cost for this meal/side dish is roughly around $5.50.
Keto Parmesan Chicken

Daily Breakfast and or Snack: Power Green Smoothie
Combine Spinach, Open Nature Almond Milk, Open Nature vanilla protein powder, and frozen mango or berries in a blender with ice. Blend until smooth and enjoy. Roasted Tomato Soup and grilled cheese sandwiches using the vine ripe tomatoes on sale for $.97/lb, the Sargento Cheese for $1.49, and great deals on bread at Safeway this week. The recipe calls for 3 lbs – so for under $3, you’ll have 5 servings of tomato soup that you can portion out for lunches with grilled cheese.
