Marinated Salmon
Deliciously marinated salmon is grilled, then topped with sweet and spicy mango salsa. The result is a perfect weeknight meal that comes together in under 30 minutes.

Salmon and mango are on sale at Safeway this week, so this is a perfect combination to make using the fresh and seasonal ingredients.
Best Marinade for Salmon
My salmon marinade recipe is inspired by one of my favorite food bloggers, Nagi from RecipeTinEats. I use her base recipe with the addition of sriracha, which gives the marinade a kick but does not make it spicy at all. It simply imparts a delicious flavor that ties the marinade together. This is not an Asian-tasting marinade, the soy sauce is simply a flavor
- 4 salmon fillets 5 -6 oz each
- olive oil (for grilling)
- 1/3 cup low sodium soy sauce (or coconut aminos)
- 2 garlic cloves, minced
- 2 tablespoons lemon juice (freshly squeezed)
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1/2 teaspoon sriracha sauce (or chile paste)
Mix the marinade in a large bowl or food storage container. (I use a glass pyrex baking dish with a lid)
Place the salmon into the marinade flesh side down and turn to coat.
Cover and marinate the salmon for 1-hour min, up to 24 hours.
Mango Salsa
- 1 mango, diced into 1/4″ pieces
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, diced
- 1 tablespoon jalapeno, diced
- 1 tablespoon mint, thinly sliced
- juice of 1 lime
- salt and pepper to taste
- a drizzle of olive oil
Place all salsa ingredients in a small bowl.
Mix to combine.
Oven Roasted Marinated Salmon
Marinated salmon can be roasted in the oven or cooked on a grill.
To prepare the salmon in the oven, you’ll want to pre-heat the oven to 350 degrees. Remove the salmon from the refrigerator for 20 minutes prior to cooking.
Cook the salmon, uncovered for 20 minutes in the marinade in a glass pyrex dish. Baste the salmon 2 to 3 times while it is cooking with the marinade in the pan so that it carmelizes on the top.
No need to flip the salmon in the oven.
Top with the mango salsa and enjoy.
How to Grill Marinated Salmon
You’ll want to remove the salmon from the refrigerator at least 20 minutes before grilling to allow it to come to room temperature.
- Heat the grill to medium heat.
- Brush the grates with oil
- Drizzle olive oil over the salmon to prevent sticking to the grill
- Place the salmon flesh side down (skin side up)
Cook for 5 minutes
Turn and cook for 4-5 minutes more with the skin side down.
Note – while I used a 1.5-pound fillet for the pictures – it is easier to flip the salmon on the grill if you have it pre-cut into 5-6 oz portions.
How do you know when salmon is cooked?
You’ll know the salmon is done when the flesh of the salmon changes from translucent to opaque. The ideal internal temperature should be 130° for a perfectly cooked medium salmon.
If your salmon is covered with the white albumin while cooking, then it’s overcooked.
What to Serve with Salmon
You can serve the salmon with a simple side of cilantro or parsley lime rice, a potato or a salad. Here are some suggestions.

Marinated Salmon With Mango Salsa
Ingredients
